Walnut Carrot Kosambari
Carrot kosambri is a refreshing and healthy salad perfect to beat the summer heat. Carrots are rich in Vitamin A, fibre and antioxidants, and our addition of walnuts makes this salad a nutritious addition to any meal. Kosambri can be served as a side dish or as a snack. This simple dish is usually eaten in the southern part of India, especially in the state of Karnataka.

Ingredients
2 cups grated carrots
3 tbsp lemon juice
Salt to taste
1 tbsp sugar
1 tbsp peanut oil
1 tsp mustard seeds
1 tsp cumin seeds
Pinch of asafoetida
1 green chilli
1 sprig of curry leaves
1 tsp fresh shredded coconut
1/2 cup California walnuts, roasted and chopped
Method
1. Wash, peel and shred carrots.
2. In a medium bowl, add carrots, lemon juice, salt, sugar and mix well.
3. Heat oil in a small pan, add mustard seeds, cumin seeds, asafoetida, green chillies, curry leaves and walnuts.
4. Add to the carrots and top with shredded coconut.
