Akhroti Seekh Kebab
Seekh kabab is a popular North Indian dish made with minced meat and a variety of spices. The name "seekh" comes from the skewers used to cook the kababs. The meat mixture is traditionally hand-pressed onto the skewers, giving them their characteristic shape. The kababs are then grilled over hot charcoal and served with chutney, naan, and salad. Its spicy, smoky flavour makes it a favourite among meat lovers, and its easy preparation makes it a popular dish for home cooks.

Ingredients
2 cups minced mutton
1/4 cup California walnuts, crushed
Skewers to make the kebabs
Oil for brushing
For Marination
1 tbsp ginger garlic paste
1 tsp red chilly powder
1.5 tbsp salt
1/4 tsp black pepper, powdered
1/4 tsp garam masala
For Serving
Chaat masala
Lemon halves
Method
1. In a large bowl, mix minced meat with all the other ingredients and massage the meat for 5 minutes till it starts feeling warm.
2. Shape the meat mixture into long cylinders and insert a skewer lengthwise through the centre.
3. Brush them with oil and cook on a medium flame for 10 minutes, rolling intermittently.
5. Sprinkle chaat masala and squeeze some lemon juice.
6. Serve!
