Apple Walnut Jam

Apple walnut jam is a delicious spread that combines the sweetness of apples with the nuttiness of walnuts. The finished product is a flavorful jam with chunks of tender apples and crunchy walnuts. The jam can be enjoyed on toast, biscuits, or as a topping for oatmeal or yoghurt. This apple walnut jam is easy to make and makes a great homemade gift for friends and family.

Ingredients

3 cups dessert apples, peeled, cored and diced
1 cup California walnuts, chopped roughly
1/2 cup apple juice
1/2 tsp clove powder
1/2 tsp nutmeg powder
1/4 tsp mace powder
1/2 tsp green cardamom powder
1 tsp cinnamon powder
1 tbsp salted butter
1 cup light brown sugar
1 small lemon, zested and juiced
1 tbsp brandy (optional, yet strongly recommended)

Method

1. Heat butter in a pan and stir-fry the diced apples on high flame for 2 minutes.

2. Add walnuts and continue stirring for another 2 minutes.

3. Add brandy and deglaze the pan.

4. Add all the other ingredients and spices and cook covered on medium-low flame for 30 minutes.

5. Stir occasionally so that the apples or sugar do not stick to the bottom of the pan.

6. Leave to cool with the lid covered.

7. Transfer in a sterilized jar and bottle capped and refrigerated.
