Smoked ‘Hirva’ Walnuts

Hirva masala is a combination of several spices and originates from the western state of Maharashtra. The distinctive green colour of the masala comes from the addition of fresh coriander leaves. Hirva masala is a versatile spice blend that can be used in marinades, curries, and stir-fries to add a unique, bold and complex depth of flavour to any dish.

Ingredients

1 egg white
2 cups California walnut halves
1 piece charcoal
1 tsp oil

For Green Chutney
1/4 cup coriander seeds
3 green chillies
1 tsp cumin seeds
1 clove garlic
6-10 black peppercorns
2 tbsp raw rice
1 tsp salt

Method

1. Preheat oven to 160°C.

2. Line a baking sheet with butter paper and set aside.

3. Grind the green chutney till it is fine and smooth.

4. In a large bowl, whisk together the egg whites until foamy.

5. Stir in the chutney, salt and walnuts into the egg whites.

6. Spread out onto a baking sheet. Bake for 20 minutes stirring once after 10 minutes.

7. Cool thoroughly. Transfer to a bowl.

8. Heat charcoal till it lights up and transfer to a little metal bowl and place it in the centre of the walnuts.

9. Add oil to the charcoal and cover with a lid.

10. Serve!
