Walnut Masala Chai

Here is a recipe for Masala Chai, the quintessential Indian dish made with a blend of tea leaves, milk, spices, and sweetener. The word "masala" refers to a mixture of spices commonly used in Indian cuisine, such as cardamom, cinnamon, cloves, ginger, and black pepper. In recent years, masala chai has become popular globally and can be found in cafes and homes around the world. Ingredients

For Walnut Milk
1 cup untoasted California walnuts
2 cups water
1 cup cold water

For Chai Masala
1 tbsp cardamom seeds
1/2 tsp cloves
1 tbsp dried ginger powder
1 tsp peppercorns
1-inch cinnamon stick
1 tbsp fennel seeds

For Chai
1 cup water
2 tbsp tea leaves CTC
1 cup walnut milk
sugar as desired
1 tsp chai masala

Method

For Walnut Milk
1. Soak a cup of untoasted California walnuts for 2 hours in 2 cups of water.

2. Strain and rinse walnuts well. Transfer to a blender with 1 cup of cold water. Blend on high for a minute.

3. Strain through a muslin cloth till you get an almost dry powdery mass in the muslin cloth after pressing the milk.

4. Transfer to a glass jar and store in the refrigerator. This gives you 2 cups of walnut milk.

For Masala Chai
1. Make a fine coarse textured masala using all the ingredients in a spice grinder. Bottle and keep aside.

2. In a pot, heat water.

3. Add tea leaves and sugar as per your desired quantity.

4. Bring to a boil for 2 minutes on a medium flame.

5. Add walnut milk and chai masala. Let it boil for another minute.

6. Strain and serve hot.
