Walnut Spinach Shorba

2 tbsp oil
2 tbsp butter
1 bay leaf
1-inch cinnamon stick
3-4 cloves
1 tsp black peppercorns
1/2 tbsp coriander seeds
1tsp cumin seeds
3-4 cloves garlic
1-inch ginger
2-3 green chillies
1 small onion, chopped
1/2 up California walnuts
2 medium bunches of spinach
2-3 tbsp cream
1/2 tsp turmeric powder
1 tbsp coriander powder
1 tsp garam masala
Salt to taste
2 cup water
California walnuts, chopped for garnish
1. Heat oil in a pan, add cumin seeds, coriander seeds, black pepper, cloves, cinnamon stick and bay leaf, mix well and sauté for 1 minute.
2. Add ginger, garlic, and green chillies, mix well and sauté for 1 minute.
3. Add Onion chopped, mix well and sauté for 1 minute.
4. Add Walnut and spinach, mix well and sauté for 3-4 minutes.
5. Add turmeric powder, coriander powder, garam masala and salt, mix well and sauté for 6-8 minutes.
6. Add water and bring to boil.
7. Remove and grind to a smooth puree. Strain the puree and keep it aside.
8. Heat butter in pan, add strained spinach puree and fresh cream, mix well and cook for 2 minutes.
9. Remove in serving bowl, garnish with chopped walnuts and fresh cream and serve.
